Palak soup
1 big bunch Palak
1 Medium size onion ( finely cut )
2 tbs. clarified butter or olive oil
Method
Clean the Palak leaves
Blanch Palak
Now take a pan add butter
Now add finely chopped onions and Palak
Stir for 5 minutes and allow it cool
Transfer into mixie and grind into a fine purée.
Now transfer the paste into a vessel, add, half glass milk and one glass water
Allow it to boil for few minutes and switch off
Add salt and pepper after serving into the serving bowls.
Note:
Blanching helps in retaining the colour of Palak
Blanching:
Take a wide mouth pan , pour water and let it boil. Now add Palak and leave it for 5 minutes. Then transfer Palak into a bowl , now pour cold over it and drain the water.
