Manchow Soup

Manchow soup

This soup contains lots of veggies and is good for winters

1litre. Vegetable stock( can use readily available stock or can prepare at home)

1 bowl. Finely chopped cabbage red or green or both ( 1/2 bowl each colour)
1/4 bowl. Finely chopped spring onions
1/2 bowl. French beans ( finely chopped)
1/2 bowl. Finely chopped carrots
1/2 bowl. Mushrooms ( optional)
1/2 bowl. Brocolli ( finely cut)
1 inch. Ginger grated
1/2 bowl. Fried noodles
Green chilli sauce
Vinegar
Soya sauce
Salt
Pepper powder

Method

Take a big pan, add very little oil,add the spring onions and all the veggies. Sauté for a minute or two. Add the entire vegetable stock .
Now allow the vegetables to boil for 5-10 minutes.

See that the veggies are not over cooked., they should not lose their colour.

Add, 1 tbsp vinegar
2 tbsp. chilli sauce
1- 1 1/2. tbsp soya sauce
Grated ginger
Let them boil for 5 minutes , add salt
Now add pepper powder and serve piping hot.
Add handful of fried noodles for crispy bite in the soup.

This soup is filling and is very healthy.

Stock preparation:

Take about 2 litres water and add 1 onion, any left out vegetables, add, cinnamon leaf and boil until the water becomes half.Now throw the veggies and cool the water.
