
Leafy Vegetables Biryani
Leafy vegetable biryani
1 cup. Palak
1 glass Basmati rice ( 200 gm, soak for 15 minutes)
1 cup. Chukka koora 1 cup.
1 cup. Bacchali koora
1 cup. Gongura
1 cup. Tota koora
1/2 cup. Spring onions
Few. Mint leaves
Few. Coriander leaves
4-5. Green chillies
Few. Garlic cloves
1-2. Onions.
2 -3 sticks. Cinnamon
8-10. Cloves
3-4. Cardamom.
Handful. Cashews
Method
Take a pan, add oil,add cinnamon,cloves ,cardamon, add onions,sauté for few minutes,now add few cashews, ginger chilli paste and garlic,
Add mint and coriander leaves ,sauté a minute.
Now add all the cleaned and chopped leafy vegetables, fry for 10 minutes.
Now add 2 glasses water and allow it boil.
Add the pre soaked rice to it and cook untilit is done.
Do not over cook..
Add less water as it tastes better when it is tenderly cooked.
Note
Do not add excess mint as it gives strongflavour and also bitter taste.
