
Daddojanam with Quinoa
Ingredients
- 1 cup quinoa
- Add 2 and half cups of water to cook 1 cup quinoa
- 1 big cup yogurt
- 1 green chili- finely cut
- 10 or 15 Cashews optional
- 1 inch ginger finely cut or grated
- Salt to taste
Seasoning:
- 1 tbs mustard seeds
- 1 tbs cumin seeds
- Bengal gram
- Channa dal
- Split black gram/ urad dal
- 1 or 2 red chillies (add according to taste)
- Few Curry leaves
- 1 spoon olive oil
Take a pan, add olive oil, fry the cashews, add channa dal, urad dal,. Add mustard seeds a little later and cumin seeds.Now add the grated ginger, red chillies, cut green chili, curry leaves and add the cooked quinoa. Add the yogurt and salt mix well. Switch of the gas and transfer them into a glass bowl.
Variations:
Can also be prepared by using cooked brown rice or cooked white rice.
