Coriander /Cilantro rice:
Ingredients:
- 1 cup cooked rice
- 1 medium bunch Coriander
- 1 inch piece of ginger
- Jeera(Cumin seeds) and Chana Dal for seasoning.
- 2 to 3 green chilies
- Green Peas, carrots, beans,onions(optional)
- Vegetables should be cut into small pieces.
- Onions should be finely chopped.
- 10 Cashew nuts
- 1 tablespoon of Lemon juice
- Salt to taste
- Turmeric 1 pinch
- 1 to 2 teaspoons Olive oil
Method:
- Make a paste of ginger, green chilies, coriander and salt in a mixer, or alternatively can cut into fine pieces.
Take oil in the pan, add jeera and Chana dal, add the cashews, fry them, add onions, sauté it for few minutes. - After onions turn into light brown color, add remaining vegetables and let it cook on medium flame by covering the pan with a lid.
- This helps in cooking the vegetables faster and retain the vitamins.
- Then add the coriander paste and sauté it till the raw smell evaporates.
- Add little turmeric powder, salt to taste and add the cooked rice.
- Mix all vegetables with the rice and leave it for five minutes and add a table spoon of lemon juice and switch off the stove.
- Transfer into a bowl.
