
Colored Capsicum Rice
Ingredients:
Rice 1 glass – 1.5 glass water, 200 grams
Bell peppers/Capsicum, yellow, green , red, orange ( one big bowl cut into fine long pieces)
Carrots – 2,3 finely cut long pieces
Cabbage – 1 small bowl
Spring onion – One bunch( 5,6)
Onions – 2 big , finely cut into long pieces.
Ginger – Small piece grate it finely
Garlic – 1 pod
Cashew nuts – 10- 15
Raisins – 20
Cinnamon -1 inch piece,
Cloves – 5,6
Cardamom – 2,3
Pepper – Powder 1 teaspoon
Green chilies -2( optional)
Oil – 2 teaspoons
Method:
1) Soak rice for 15 mts and Cook it. It is important that rice grains are separate. Transfer the rice into a bowl and allow it to cool.
2) Sauté the bell peppers in little oil, in a wide mouthed pan for few minutes. Transfer them separately in a bowl.
3) Fry cashew nuts, raisins in oil , take them in a small glass bowl.
4) Now add the bay leaf, cinnamon pieces, cloves, cardamom , add finely cut onions, Ginger, garlic, Fry for few minutes,
5) Add carrot, cabbage,spring onion and salt
6) Stir them for 5 to 10 minutes . Now add the cooked rice to the pan and allow the flavours to absorb . Add cashew nuts, pepper powder to this rice mixture and stir carefully. Do not over stir, for rice may be broken .
7) Now add the raisins and all the colourful peppers to the rice and stir gently.
8) Salt and pepper powder needs be added according to taste.
This rice is very delicious and healthy. Can be eaten as it is or any raita ( yogurt).
Basmati rice gives you the long grain look.
