Baingan Barta ( brinjal chutney)
1 big. Baingan ( heated on a gas or oven )
1 big. Onion ( chopped)
3-4 Green chillies
Lemon size. Tamarind
1tbsp. Mustard seeds
1/2 tsp. Methi seeds
3-4 Red chillies

Method
Take out the pulp of the brinjal by carefully peeling the skin, add turmeric and salt.
Keep it aside.
Now take a pan add oil, season with mustard seeds and methi, after they splutter add hing.red chillies and green chillies.Now add the onions,fry until the raw smell evaporates and add the brinjal pulp. Mix thoroughly.
Now add the tamarind pulp,add enough water and let it boil for 5-10 minutes.
Transfer it into a glass bowl and decorate with coriander leaves.
