Ingredients:

Fresh methi leaves – 1 medium size bunch
Red chilllies – 4 or 5 ( according to taste)
Coriander seeds – 1 teaspoon
Tamarind – Small lemon sized ball
Jaggery – Small pieces ( this removes the bitterness of methi and gives good taste to the chutney).
Olive oil or sesame oil for seasoning.

Seasoning:

Olive oil /sesame oil
Mustard seeds – 1 teaspoon
Cumin seeds – 1 teaspoon
Red chillies – 2 ( broken into small pieces)
Hing

Method:

1. Sauté fresh fenugreek/ methi leaves in oil
2. Add coriander/ Dhania seeds, red chillies , salt, tamarind, and jaggery.
3. Grind them in a mixer.

This chutney is very delicious and healthy. Fenugreek is a wonderful leafy vegetable which cools the system, controls blood sugar. Can be used as a side dish in rice, Dosas or idli.

Alternatively :

Fenugreek leaves can replaced with Amarnath(Thotakura) leaves and repeat the same procedure
