
Carrot and Red Chili Chutney
Ingredients:
Carrots – 3 big , cut into small pieces.
Coriander – 1 small bunch
Curry leaves – handful
Fenugreek seeds – quarter teaspoon
Olive oil – 1 tablespoon
Tamarind – Small lemon sized
Salt to taste
Seasoning :
Mustard seeds – 1 teaspoon
Cumin seeds – 1/2 teaspoon
Red chillies – 4 or 5
Hing – Pinch
Method:
1) Heat a frying pan, add oil in the pan
2) Fry carrot cubes and fresh red chillies in oil for five minutes
3) Add coriander leaves, curry leaves, fenugreek seeds, tamarind, salt and jaggery
4) Sauté it for few minutes and switch off the gas
5) Allow it cool and then grind in a mixer
6) Now, for preparing the seasoning for the chutney — add a little oil to a small pan. Add mustard seeds, cumin seeds, red chillies and hing.
7) Add Seasoning to the Chutney
This chutney is very healthy and tastes delicious and is a good side dish for rice or dosa.
It can also be taken as a dip with nachos
